Sprouted Quinoa Sesame Salad

Salad mixture
2 cups Broccoli slaw (shredded broccoli stalks, carrots, red cabbage)
1 1/4 cups Sprouted quinoa, sprouted wild rice, sprouted brown rice, sprouted red rice
1/2 mango
Pumpkin seeds (lightly toasted in dry pan)
Crispy jalapeños or onions (optional).
Mix all ingredients together
Asian Vinagrette:

- 3 tablespoons rice wine vinegar
- 1 tablespoon sugar
- 3 tablespoons soy sauce
- 1/2 tablespoon ginger
- 1/4 teaspoon garlic
- 2 tablespoons sesame oil
- 1/2 cup cold pressed extra virgin olive oil
- 1 tablespoon sesame seeds, lightly toasted
- 1 tablespoon red onion
Directions
- Mix first 5 ingredients in a bowl
- Slowly drizzle in the oil, whisking constantly so that the dressing will emulsify.
- Once dressing is combined, add onions.
