Homemade Pumpernickel Loaf

This Pumpernickel Loaf is one of my favorite breads. Why would you go out and buy a bread when you can spend 4 hours making your own at home? Jkjkjkjk It does take awhile but a lot of that is hands-off time; like bread rising, and cooking.
I made this loaf in my bread maker but I had no idea if my yeast was still good so it was a big gamble. I waited 4 hours to find out and yes, my bread did in fact rise.
I love fresh breads and while some bakeries make amazing loafs, it’s always nice to make your own. I used a bread maker with this recipe and it turned out fantastic.
If you have a bread maker, I highly suggest you try this. You can also make this by hand very easily.
Ingredients for a Large Loaf:
Water: 1 cup plus 2 TBSP
Flour: 2 and 1/2 cups (I used regular flour)
Rye flour: 1 cup plus 3 TBSP
Salt: 1 tsp
Molasses: 1/3 cup
Oil: 1 and 1/2 tbsp (any oil that isn’t strong. avocado, canola, etc)
Cocoa Powder: 3 TBSP
Caraway Seeds: 1 TBSP
Instant Coffee: 1 and 1/2 tsp
Yeast: 2 tsp
Directions:
Add all ingredients in the order listed and set your machine to 4 or to the large loaf setting.
Wait until machine turns off. Lay on rack to cool and then rip off a huge piece.
