EASY & FAST Thyme and Tomato Bursting Pasta for PARENTS| August 21, 2019
How much plain cooked pasta to you have in your house at any given time? I’m sure a lot of you will agree that your kids love plain pasta. (Sometimes they will get adventurous and put salt or parmesan on it.) And how many of you have been left with a pot of boring – but cooked – leftover pasta. If you think about it, this is actually a huge benefit. While my husband and I don’t eat a lot of pasta dishes in our house, as I believe in sticking with the experts, and by that I mean the Italians, I will say, I love me a good bowl of noodles.
I was blown away at how good this pasta tasted. Hey, maybe there’s a little Italian in me after all.
What made me venture into noodle dishes? When I was leaving for a vacation, I was conjuring up creative ways to empty my fridge. And low and behold, the cooked unused pasta appeared. I took 10 minutes and made up this easy and delicious dish. You can use whatever vegetables you have on hand but make sure you add the tomatoes. It’s the best part because when you cook them up, they get soft, sweet, and warm and burst in your mouth. I paired this with a starter salad and voila; dinner in minutes.
- Olive Oil – 2 tbsp
- Onion – 1 diced
- Garlic – 2 cloves chopped
- Kale – 2 handfuls
- Cauliflower – 1 cup
- Broccoli – 1 cup
- Tomatoes – 1/2 cup
- Thyme – 2 tsp
- Basil – 1 tsp
- Salt – 1/4 tsp
- Pepper -1/4 tsp
- Cooked Pasta – however much you have – about 2 cups
Heat olive oil on medium heat in pan. Add onions until they are translucent. Add garlic and cook for another minute. Add cauliflower, broccoli, cherry tomatoes, then kale. After a few minutes add the cooked pasta, season with thyme, basil, salt and pepper. Mix up and serve immediately. Pair with crusty bread or a side salad.
