Carrot Cake Smoothie Bowl

Every so often I’m presented with a clipping of a recipe that my husband has found and asks me to make. – like a child asking a grown up to ties his shoelaces. But he’s super cute so I always oblige. This was an intersting one that had no appeal to me. The name carrot cake smoothie bowl sounded wierd. I’m not that big of a fan of carrot cake to begin with – I always choose chocolate! Why would I want a smoothie that tastes like cake? I’d rather have a piece of cake. So I put it aside and figured I wouldn’t make it. But this morning he asked me if I’m planning on making it for breakfast so I though along a different thought pattern of how sweet it was that he wants me to make him something special. I know. I’m weird. I opened the fridge and cupboard, pulled over the vitamix and prepared the smoothie. I followed the recipe exactly (which I never do) as I thought this sounds so bad, the only way it could potentially be good is if I actually try it exactly as it’s supposed to me. One thing to note though – potentially, there’s a different spice other than nutmeg in my nutmeg jar. I can’t remember what I put in there. So who actually knows what I put in my smoothie for that ingredient.
Result? The smoothie turned out great which is why I’m sharing it with you. There was no one credited to this recipe (also why I thought this may not turn out) so here ya go. Thanks anonymous.
Ingredients:
- 1 apple peeled and chopped (about 1 cup)
- 1/4 cup of chopped or shredded carrot
- 1/4 cup of yogurt
- 1/3 cup of milk
- 1/4 cup of quick oats
- 2 tsp of maple syrup
- 3/4 tsp of ground cinnamon
- 1/4 tsp of nutmeg
Toppings:
- Chopped apple
- Pumpkin Seeds
- Chopped Walnuts
- Urban Hippie Granola
- Honey
Blend everything together. Pour in bowl. Top with toppings. Done!
